Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup firmly packed brown sugar
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ginger
  • 1/2 cup butter, melted
  • 1 cup cooked pumpkin
  • 1/3 cup buttermilk
  • 2 eggs, slightly beaten

Instructions

  1. Heat the oven to 400°F.
  2. In a large bowl, stir together all ingredients except butter, pumpkin, buttermilk, and eggs.
  3. In a medium bowl, stir together the melted butter, cooked pumpkin, buttermilk, and slightly beaten eggs.
  4. Add the wet ingredients to the dry ingredients and stir until moistened.
  5. Spoon the batter into a greased 12-cup muffin pan.
  6. Bake for 15 to 20 minutes or until lightly browned.
  7. Let stand for 5 minutes, then remove from the pan.
