  • pepper

  • 3 pt. water
  • 2 Tbsp. vinegar
  • 8 cloves
  • 8 black peppercorns
  • 2 bay leaves
  • 1/2 stalk celery
  • 1/2 tsp. thyme
  • 1 tomato

Instructions

  1. Rub each duck well inside and out with salt, pepper, and ground ginger.
  2. Place one-half apple in each duck; place ducks in a large baking pan.
  3. In a skillet, sauté onions in butter until lightly browned.
  4. Add water and vinegar to the skillet and heat to boiling.
  5. Add cloves, black peppercorns, bay leaves, chopped celery, thyme, and chopped tomato to the mixture.
  6. Pour the mixture over the ducks in the baking pan.
  7. Start cooking at 450°F for 20 minutes.
  8. Reduce heat to 350°F and bake for approximately 2 hours, basting frequently.
