- Cook fresh green beans in boiling water for 2 to 3 minutes or until crisp-tender.
- Remove from boiling water and plunge into ice water until cold.
- Drain the green beans.
- In a large bowl, combine the cooked green beans, drained and rinsed pinto beans, drained and rinsed butter beans, and red onion rings.
- In a jar with a tight-fitting lid, combine white vinegar, oil, crushed garlic, sugar, and red chili pepper flakes.
- Shake the jar well to mix the dressing.
- Pour the dressing over the bean and onion mixture.
- Stir to combine thoroughly and cover.
- Refrigerate for at least 1 hour or until chilled.
- Serve on lettuce-lined plates if desired.
