Instructions

  1. Wipe the mushrooms clean.
  2. Combine wine vinegar, water, olive oil, bay leaf, fennel seed, salt, pepper, lemon juice, and sugar in a saucepan.
  3. Bring the mixture to a boil and cook for 5 minutes.
  4. Pour the hot marinade over the mushrooms and add the minced garlic and optional red peppers.
  5. Stir well to coat all the mushrooms with the marinade.
  6. Place the marinating mushrooms in a container with a tight lid.
  7. Chill for at least 12 hours, shaking or stirring if necessary.
