Blender Gazpacho
A refreshing, chilled gazpacho with vibrant tomato and vegetable flavors, perfect for hot days or a light, healthy appetizer. Suitable for summer menus and quick prep.
Ingredients
- 2 c. tomato juice ⓘ
- 1 c. fresh tomatoes, peeled and chopped ⓘ
- 1/2 c. green pepper, chopped ⓘ
- 1/2 c. celery, chopped ⓘ
- 1/2 c. cucumber, chopped ⓘ
- 1/4 c. onion, chopped ⓘ
- 2 Tbsp. fresh parsley, minced
- 1 clove garlic ⓘ
- 2 Tbsp. wine vinegar ⓘ
- 2 Tbsp. salad oil ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. Worcestershire sauce ⓘ
- 4 drops bottled hot pepper sauce ⓘ
- 1/4 tsp. freshly ground pepper ⓘ
Instructions
- Place all ingredients in the blender container.
- Blend for 30 seconds until smooth.
- Chill the gazpacho in the refrigerator.
- Serve in chilled glass mugs.
