Ingredients

  • 3 lb. whole catfish or fillets
  • 1 c. yellow corn meal
  • 1 1/2 tsp. paprika
  • 1/2 tsp. celery salt
  • 1/2 tsp. pepper
  • 1/4 tsp. dry mustard
  • 1/2 tsp. onion powder
  • vegetable oil
  • lemon wedges

Instructions

  1. Combine corn meal and seasonings in a shallow dish.
  2. Roll the fish in the seasoned meal, shaking off excess.
  3. Place the coated fish in hot vegetable oil in a 12-inch frypan, arranging in a single layer.
  4. Fry at moderate heat until well browned, about 4 minutes per side, turning to brown both sides.
  5. Remove from pan with a slotted spatula and drain on paper towels.
  6. Garnish with lemon wedges and serve with slaw and corn bread or hush puppies.
