Ingredients

  • 1/4 cup chopped onion
  • 1/4 cup butter
  • 4 cups soft bread crumbs
  • 1 teaspoon poultry seasoning
  • 1 cup mayonnaise
  • 3/4 teaspoon salt
  • dash of pepper
  • 1 pound haddock fillets

Instructions

  1. Cook chopped onion in butter until tender, not brown.
  2. Stir in bread crumbs and seasonings.
  3. Blend in 1/2 cup of mayonnaise.
  4. Cut haddock fillets into five 8-inch long strips.
  5. Spread the stuffing mixture onto each fillet and roll up.
  6. Place in a greased casserole or baking cups, uncovered.
  7. Bake at 350°F for 20 minutes.
  8. Spread with remaining mayonnaise.
  9. Bake for an additional 20 minutes.
  10. Garnish with parsley before serving.
