Ingredients
- 3/4 cup pitted prunes ⓘ
- 1/2 to 3/4 cup milk ⓘ
- 1/3 cup butter or margarine, softened ⓘ
- 1/2 cup firmly packed brown sugar ⓘ
- 1 large egg ⓘ
- 2 cups all-purpose flour ⓘ
- 1 tablespoon baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 1 tablespoon ground cinnamon ⓘ
- 1/2 teaspoon vanilla extract ⓘ
Instructions
- Cook prunes according to package directions.
- Drain, reserving liquid.
- Add enough milk to prune liquid to equal 1 cup; set aside.
- Chop prunes and set aside.
- Beat butter at medium speed with a mixer until creamy; gradually add brown sugar and beat well.
- Add egg and beat until blended.
- Combine flour, baking powder, baking soda, salt, and ground cinnamon.
- Add the flour mixture to the butter mixture, alternately with the prune liquid mixture, beginning and ending with flour mixture, beating at low speed until blended after each addition.
- Stir in chopped prunes and vanilla extract.
- Spoon batter into greased muffin tins, filling 2/3 full.
- Bake at 400°F (200°C) for 22 to 25 minutes.
- Remove muffins from pan immediately and cool.
