Ingredients

  • 3/4 cup pitted prunes
  • 1/2 to 3/4 cup milk
  • 1/3 cup butter or margarine, softened
  • 1/2 cup firmly packed brown sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cook prunes according to package directions.
  2. Drain, reserving liquid.
  3. Add enough milk to prune liquid to equal 1 cup; set aside.
  4. Chop prunes and set aside.
  5. Beat butter at medium speed with a mixer until creamy; gradually add brown sugar and beat well.
  6. Add egg and beat until blended.
  7. Combine flour, baking powder, baking soda, salt, and ground cinnamon.
  8. Add the flour mixture to the butter mixture, alternately with the prune liquid mixture, beginning and ending with flour mixture, beating at low speed until blended after each addition.
  9. Stir in chopped prunes and vanilla extract.
  10. Spoon batter into greased muffin tins, filling 2/3 full.
  11. Bake at 400°F (200°C) for 22 to 25 minutes.
  12. Remove muffins from pan immediately and cool.
