A hearty, spicy vegetable beef soup packed with tomatoes, chiles, mixed vegetables, and flavorful ground beef, perfect for comforting meals and family gatherings.

Ingredients

  • 1 can Rotel original (tomatoes & chiles)
  • 1 32 oz. jar Ragu sauce
  • 1 can beef broth
  • 1 16 oz. package frozen mixed vegetables
  • 1 lb ground beef
  • 1 tablespoon sugar
  • 1 medium onion chopped
  • 1-2 teaspoons minced garlic

Instructions

  1. Saute onions with oil and garlic.
  2. Brown ground beef and drain excess fat.
  3. Add Rotel, Ragu sauce, beef broth, and frozen mixed vegetables to the pot.
  4. Bring the mixture to a simmer and add sugar, then season with salt and pepper to taste.
  5. Let simmer for 30 minutes or longer if desired.
  6. Add a little water to thin the soup if needed.
