Spinach Appetizers

Delicious spinach appetizer balls combining creamy spinach, seasoned stuffing, and Parmesan, perfect for parties or snacks. Crispy on the outside and flavorful inside.

Ingredients

  • 2 boxes frozen chopped spinach, thawed and drained
  • 2 cups seasoned stuffing mix
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1 large onion, chopped fine
  • 3/4 cup melted margarine
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Mix all ingredients together in a large bowl.
  2. Refrigerate the mixture for about 30 minutes for easier handling.
  3. Roll into 1-inch balls.
  4. Place on a cookie sheet and freeze for about 20 minutes.
  5. Can be kept in a plastic bag or freezer until needed, or bake at 350°F for 20 minutes to serve.
