Spinach Lasagne Rolls

Ingredients

  • 1 Tbsp. oil
  • 1 (10 oz.) pkg. leaf spinach, thawed, drained and chopped
  • 1 (15 oz.) Ricotta cheese
  • 1/2 cup grated Parmesan
  • 1 egg, beaten
  • 1 Tbsp. parsley, chopped
  • salt and pepper
  • 2 cups spaghetti sauce
  • 8 lasagne noodles, freshly cooked
  • 1 1/4 cups grated Mozzarella cheese

Instructions

  1. Preheat oven to 350°F.
  2. Heat oil in a skillet over medium heat. Add spinach and cook until tender, about 4 minutes.
  3. Allow spinach to cool.
  4. In a large bowl, combine spinach, ricotta cheese, Parmesan, beaten egg, and chopped parsley.
  5. Add salt and pepper to taste.
  6. Spread 1 cup spaghetti sauce in the bottom of an 8-inch dish.
  7. Place one lasagne noodle on a sheet of wax paper. Spread 1/3 cup of the ricotta mixture over the noodle.
  8. Roll up the noodle with the filling inside.
  9. Place the seam side down in the dish.
  10. Repeat with remaining noodles and filling.
  11. Top the assembled rolls with 1 cup of spaghetti sauce.
  12. Sprinkle grated mozzarella cheese over the top.
  13. Bake in the preheated oven for about 45 minutes, until the cheese is melted and bubbly.
