Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 Tbsp. minced dried onion
  • 2 Tbsp. water
  • 3 Tbsp. butter or margarine
  • 1 c. herb-seasoned stuffing mix
  • 1 c. grated Parmesan cheese

Instructions

  1. Place frozen spinach and dried onion in a 1 1/2-quart casserole with water.
  2. Cook, covered, in a microwave on High for 9 to 11 minutes, stirring once.
  3. Let stand for 3 minutes.
  4. Drain well. In the same casserole, stir together hot spinach mixture and butter or margarine until butter melts.
  5. Add stuffing mix and Parmesan cheese.
  6. Stir in eggs.
  7. Drop small mounds of the mixture onto a baking sheet lined with wax paper.
  8. Freeze about 10 minutes to firm up the mixture.
  9. Shape the frozen mounds into 1-inch balls.
