Spinach Pita
A delicious savory pie featuring spinach, feta, and cottage cheese layered with flaky fillo dough, perfect for sharing at family dinners or special occasions.

- Thaw the frozen chopped spinach and drain to remove most of the liquid.
- Add chopped scallions to the spinach.
- Mix in cottage cheese and finely crumbled Feta cheese.
- Add beaten eggs and a dash of nutmeg to the mixture.
- Mix thoroughly until well combined.
- Melt the butter.
- Place wax paper on the counter and set the fillo dough sheets out with a damp cloth over them.
- Brush the bottom of the baking pan with melted butter.
- Layer 15 sheets of fillo dough in the pan, brushing each sheet with melted butter.
- Carefully spread the spinach mixture evenly over the layered fillo sheets.
- Sprinkle with Parmesan cheese.
- Layer the remaining 15 sheets of fillo dough over the spinach mixture, brushing each sheet with melted butter.
- Slice the pie before baking.
- Bake at 350°F for 45 minutes until golden brown.
