Spinach Pita

A delicious savory pie featuring spinach, feta, and cottage cheese layered with flaky fillo dough, perfect for sharing at family dinners or special occasions.

Ingredients

  • 1 lb. fillo dough
  • 1/2 lb. sweet butter
  • 1 lb. cottage cheese
  • 1/4 lb. Feta cheese
  • dash of nutmeg
  • 1 box frozen chopped spinach
  • 10 to 12 scallions
  • 3 eggs
  • Parmesan cheese (for sprinkling)

Instructions

  1. Thaw the frozen chopped spinach and drain to remove most of the liquid.
  2. Add chopped scallions to the spinach.
  3. Mix in cottage cheese and finely crumbled Feta cheese.
  4. Add beaten eggs and a dash of nutmeg to the mixture.
  5. Mix thoroughly until well combined.
  6. Melt the butter.
  7. Place wax paper on the counter and set the fillo dough sheets out with a damp cloth over them.
  8. Brush the bottom of the baking pan with melted butter.
  9. Layer 15 sheets of fillo dough in the pan, brushing each sheet with melted butter.
  10. Carefully spread the spinach mixture evenly over the layered fillo sheets.
  11. Sprinkle with Parmesan cheese.
  12. Layer the remaining 15 sheets of fillo dough over the spinach mixture, brushing each sheet with melted butter.
  13. Slice the pie before baking.
  14. Bake at 350°F for 45 minutes until golden brown.
