Ingredients

  • 6 to 8 large potatoes
  • 1 cup sour cream
  • 1 teaspoon sugar
  • 1/2 cup margarine
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 teaspoons minced onion
  • 1 box frozen spinach
  • 1 cup Cheddar cheese, shredded

Instructions

  1. Peel, cook, and mash the potatoes.
  2. Add sour cream, sugar, margarine, salt, pepper, and minced onion to the mashed potatoes.
  3. Thaw the frozen spinach and drain well, then add it to the potato mixture.
  4. Divide the mixture into two baking dishes.
  5. Sprinkle shredded Cheddar cheese over the top of each dish.
  6. Bake uncovered at 400°F for 20 to 25 minutes.
