Ingredients

  • 6 oz. Stove Top chicken flavored stuffing
  • 6 eggs
  • 2 (10 oz.) frozen chopped spinach
  • 1/2 c. grated Parmesan cheese
  • 3/4 c. melted margarine
  • salt
  • pepper

Instructions

  1. Cook the frozen chopped spinach and drain, squeezing out excess juices.
  2. Combine the cooked spinach with the stuffing, beaten eggs, Parmesan cheese, melted margarine, minced onion, salt, and pepper.
  3. Mix well until all ingredients are evenly combined.
  4. Roll the mixture into 1-inch balls.
  5. Freeze the balls on a cookie sheet for at least 30 minutes.
  6. Bake at 350°F for about 20 minutes until golden brown.
  7. Allow to stand for a few minutes before serving.
  8. Spear with toothpicks and dip into Lemon Mayonnaise before serving.

Tips & Substitutions

For a creamier texture, consider adding a bit of cream cheese or ricotta to the mixture. You can substitute the Parmesan cheese with a blend of mozzarella and cheddar for a different flavor profile. If you prefer a spicier kick, adding a pinch of red pepper flakes can elevate the dish. Ensure the spinach is thoroughly drained to avoid sogginess in the final product.

Serving Suggestions

These spinach puffs are best served warm. They pair well with a light salad or a platter of fresh vegetables for a balanced appetizer. For dipping, Lemon Mayonnaise adds a refreshing contrast to the savory bites. They also make a great accompaniment to main dishes like Broiled Chicken Wings or Chicken Divone.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the spinach puffs on a baking sheet and warm in a preheated oven at 350°F for about 10-15 minutes, or until heated through. This will help maintain their crispiness.

Frequently Asked Questions

Can I use fresh spinach instead of frozen?

Absolutely! If using fresh spinach, you'll need about 1 pound. Sauté it in a little olive oil until wilted, then drain and squeeze out excess moisture. Fresh spinach will give a bright flavor and can enhance the overall dish.
