Spring Casserole

A hearty spring vegetable casserole featuring tender cauliflower, carrots, potatoes, peas, and a cheesy sauce, perfect for family dinners or entertaining guests.

Ingredients

  • 1 small head cauliflower
  • 8 carrots
  • 8 small potatoes
  • 1 lb. peas
  • 4 small onions
  • 1 1/2 tsp. salt
  • 4 Tbsp. oleo
  • 4 Tbsp. flour
  • 2 c. milk
  • 1/2 lb. grated cheese
  • 1 c. soft bread crumbs
  • 2 Tbsp. parsley

Instructions

  1. Cook cauliflower, carrots, potatoes, peas, and onions in salted water until tender.
  2. Drain the vegetables and place them in a baking dish.
  3. Make a sauce by melting butter, then stirring in flour and milk, cooking until thickened.
  4. Add grated cheese to the sauce and stir until melted.
  5. Pour the cheese sauce over the cooked vegetables in the baking dish.
  6. Sprinkle soft bread crumbs over the top of the casserole.
  7. Dot with 2 tablespoons of butter and garnish with parsley.
  8. Bake until the top is golden and bubbly.
