Ingredients

  • 1 can sweet cream-style corn (17 oz.)
  • 3 eggs
  • 2 1/4 cups flour
  • 1 teaspoon soda
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 1 cup corn oil
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 1 teaspoon cinnamon
  • 3/4 cup sugar

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix the sweet cream-style corn, sugar, and brown sugar.
  3. Beat in the eggs one at a time until well combined.
  4. Add the corn oil and beat until the mixture is smooth.
  5. Stir in the raisins and chopped nuts.
  6. Sift together the flour, soda, baking powder, salt, and cinnamon.
  7. Add the dry ingredients to the wet mixture all at once and stir until blended.
  8. Pour the batter into a greased 9 x 15-inch pan.
  9. Bake for 35 to 40 minutes, or until a cake tester inserted in the center comes out clean.
