Spring Vegetable Soup

A fresh, creamy spring vegetable soup featuring peas, potatoes, carrots, and green onions, perfect for a light, comforting meal during the warmer months.

Ingredients

  • 4 green onions
  • 3 Tbsp. butter
  • 2 potatoes, peeled and thinly sliced
  • 2 carrots, thinly sliced
  • salt
  • 1/2 lb. frozen or fresh peas
  • 1/4 cup light cream
  • pepper

Instructions

  1. Saute green onions in butter for about 2 minutes.
  2. Add sliced potatoes and carrots, and saute for 2 minutes longer.
  3. Add 3 cups water and 1 teaspoon salt, bring to a boil, then simmer for 12 minutes or until vegetables are tender.
  4. Add peas and cook for an additional 5 minutes.
  5. Stir in light cream, heat gently, and season with salt and pepper to taste.
