"Squasage" Casserole

Ingredients

  • 2 to 3 medium squash
  • 1 egg
  • 10 to 12 saltine crackers
  • 1/2 to 1 lb. sausage
  • 2 tsp. margarine
  • 1 tsp. dried onion
  • cheese (Velveeta slices or 2/3 cup shredded Cheddar)

Instructions

  1. Wash, slice, and cook the squash until it breaks apart easily with a fork.
  2. Drain the cooked squash.
  3. In a bowl, beat the egg and add dried onion.
  4. Crumble saltine crackers and add to the mixture.
  5. Add margarine and cooked sausage, broken into pieces, to the mixture.
  6. Mix everything well until combined.
  7. Pour the mixture into a baking dish.
  8. Top with Velveeta slices or shredded Cheddar cheese.
  9. Bake in a preheated oven at 350°F until bubbly, about 30 minutes.
  10. Do not cover while baking.
