Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup cooking oil
  • 1 1/2 cups sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cocoa
  • 1 teaspoon cinnamon
  • 2 cups grated squash
  • 1 cup chopped nuts
  • 1 cup chocolate morsels

Instructions

  1. In a large mixing bowl, cream together butter, oil, and sugars.
  2. Beat in eggs, vanilla, and buttermilk until well combined.
  3. In a separate bowl, combine flour, baking soda, baking powder, salt, cocoa, and cinnamon.
  4. Gradually stir the dry ingredients into the wet mixture.
  5. Fold in grated squash until evenly incorporated.
  6. Pour batter into a greased baking pan.
  7. Sprinkle with chopped nuts and chocolate morsels on top.
  8. Bake in a preheated 350°F (175°C) oven for 15 to 20 minutes.
  9. Allow to cool before cutting into squares.
