A creamy, cheesy squash casserole featuring tender squash, water chestnuts, pimientos, and a flavorful stuffing topping, perfect for family dinners or holiday gatherings.

Ingredients

  • 3 lb. yellow or zucchini squash
  • 1 can cream of chicken soup
  • 1 can water chestnuts
  • 4 oz. jar pimientos
  • 2 cups grated cheese
  • 2 medium onions
  • 8 oz. sour cream
  • 1 stick margarine
  • 1 package corn bread stuffing mix

Instructions

  1. Slice the squash.
  2. Drain and slice the water chestnuts.
  3. Simmer the squash and chopped onions until tender.
  4. In a bowl, stir together the cream of chicken soup, sour cream, water chestnuts, and pimientos.
  5. Drain the cooked squash and fold it into the soup mixture.
  6. Melt the margarine and drizzle it over the corn bread stuffing mix.
  7. Place half of the stuffing in the bottom of a 9 x 13-inch baking dish.
  8. Add the squash mixture over the stuffing.
  9. Top with the remaining stuffing.
  10. Bake at 350°F for 30 minutes.
  11. During the last 10 minutes of baking, sprinkle the cheese over the casserole.
