Squash Elegant
A creamy, cheesy squash casserole featuring tender squash, water chestnuts, pimientos, and a flavorful stuffing topping, perfect for family dinners or holiday gatherings.

Instructions
- Slice the squash.
- Drain and slice the water chestnuts.
- Simmer the squash and chopped onions until tender.
- In a bowl, stir together the cream of chicken soup, sour cream, water chestnuts, and pimientos.
- Drain the cooked squash and fold it into the soup mixture.
- Melt the margarine and drizzle it over the corn bread stuffing mix.
- Place half of the stuffing in the bottom of a 9 x 13-inch baking dish.
- Add the squash mixture over the stuffing.
- Top with the remaining stuffing.
- Bake at 350°F for 30 minutes.
- During the last 10 minutes of baking, sprinkle the cheese over the casserole.
