Ingredients

  • 5 medium squash (yellow, green or mixed)
  • 1/2 cup thinly sliced onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 clove garlic, crushed or garlic powder
  • 2 tablespoons wine vinegar
  • 3/4 cup sugar or less
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup salad oil

Instructions

  1. Combine the thinly sliced squash, onion, celery, and green pepper; toss lightly.
  2. Combine all other ingredients; stir well.
  3. Spoon the dressing over the vegetables.
  4. Chill for 12 hours, stirring occasionally before serving.
