  • 1 (8 oz.) pkg. cornbread stuffing mix

  2. Drain well and mash.
  3. Add grated carrot, condensed cream of chicken soup, sour cream, and chopped green chilies to the mash.
  4. Mix the stuffing mix with melted butter.
  5. Line the bottom of a 9 x 13-inch casserole dish with half of the buttered stuffing.

  7. Top with the remaining buttered stuffing.
  8. Bake at 325°F (160°C) for 50 to 60 minutes, uncovered.

Tips & Substitutions

For a richer flavor, consider adding shredded cheese to the squash mixture before baking. If you want a bit of heat, try using spicy green chilies instead of mild. If you don’t have cornbread stuffing mix, you can substitute with regular stuffing mix or make your own using stale bread and seasonings. Ensure the squash is well-drained to prevent a soggy casserole.

Serving Suggestions

This casserole pairs beautifully with a crisp green salad or roasted vegetables for a complete meal. You can also serve it alongside grilled chicken or fish for a heartier dinner. For a comforting dessert, consider making a batch of Chopped Apple Dessert to follow this savory dish.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the casserole in a preheated oven at 350°F (175°C) for about 20-30 minutes until heated through. You can also microwave individual portions for quicker reheating, but be cautious not to overcook.
