Ingredients

  • 1 3/4 cups sifted flour
  • 1 1/3 cups sugar
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup oil
  • 2 eggs
  • 1 cup cooked mashed pumpkin or squash
  • 1/3 cup water

Instructions

  1. Sift together flour, sugar, baking soda, salt, cinnamon, and nutmeg into a bowl; set aside.
  2. Combine oil, eggs, cooked mashed pumpkin, and water in another bowl; blend well using a rotary beater.
  3. Add the pumpkin mixture all at once to the dry ingredients, stirring just enough to moisten.
  4. Pour batter into a greased loaf pan.
  5. Bake at 350°F for 55 to 60 minutes.
  6. Test with a toothpick or cake tester to make sure the bread is done.
  7. Remove from pan and cool completely.
