Ingredients

  • 2 boneless sirloin strip steaks (about 10 oz. each)
  • 8 Tbsp. butter

  • 1/2 cup canned beef broth or consomme
  • 1/4 to 1/2 tsp. salt
  • 1/2 tsp. coarsely ground black pepper
  • 2 Tbsp. lemon juice
  • 2 Tbsp. minced chives

Instructions

  1. Cut steaks into 1/2 x 2-inch strips.
  2. Heat 3 tablespoons of butter in a frying pan.
  3. Saute meat over high heat for 3 to 4 minutes, tossing constantly until cooked to your liking.
  4. Remove meat to a warm platter.
  5. Add 3 tablespoons of butter to the pan.
  6. Add green onions and mushrooms to the pan.
  7. Saute over high heat for 3 to 4 minutes.
  8. Remove mushrooms and green onions to the platter with meat and keep warm.
  9. Add red wine and beef broth to the pan.
  10. Bring to a boil, scraping brown bits from the pan into the sauce.
  11. Taste and season with salt and black pepper.
  12. Add lemon juice and any juices from the meat platter.
  13. Boil over high heat until the sauce reduces to a glaze about 1/4-inch deep.
  14. Whisk in the remaining butter.
  15. Return meat and mushrooms to the pan.
  16. Toss and cook over high heat until hot.
  17. Sprinkle with minced chives and serve immediately.
