Ingredients

  • 2 medium yellow squash, sliced
  • 1 medium zucchini, sliced
  • 6 or 8 green onions and tops, chopped
  • 2 fresh ripe tomatoes, chopped
  • 1 green tomato, chopped
  • 1 green or red bell pepper, chopped
  • 2 Tbsp oleo
  • Mrs. Dash seasoning blend
  • pepper

Instructions

  1. In a 10-inch skillet, melt the oleo over medium heat.
  2. Add the sliced yellow squash, zucchini, chopped green onions and tops, chopped tomatoes, chopped green tomato, and chopped bell pepper to the skillet.
  3. Season with Mrs. Dash seasoning blend and pepper to taste.
  4. Cover the skillet and cook over medium heat for about 45 minutes, stirring occasionally.
