Ingredients

  • 3/4 cup grated carrot
  • 3/4 cup sliced zucchini
  • 1/2 pound cooked and drained sausage
  • 1 large onion, sautéed
  • 1/4 cup green pepper, sautéed
  • 1 cup grated cheese
  • 1 1/2 cups milk
  • 3 eggs
  • 3/4 cup Bisquick

Instructions

  1. Cook the grated carrot in the microwave for a few minutes.
  2. Put all the prepared ingredients, including the cooked sausage, sautéed onion and green pepper, grated carrot, sliced zucchini, and grated cheese, into a deep Pyrex pan.
  3. In a blender, mix the milk, eggs, and Bisquick until well combined.
  4. Pour the batter over the vegetables and sausage in the pan.
  5. Bake in a 400°F oven for 25 to 35 minutes.
  6. During the last 5 minutes of baking, top the dish with grated cheese.
  7. Let the stir-fry pie stand for 5 to 10 minutes before cutting and serving.
