Ingredients

  • 8 slices bacon
  • 5 hash brown potato patties
  • 1/2 cup chopped onions
  • 1 (8 oz.) can mushrooms
  • 3 cups cubed Cheddar cheese
  • 3 cups cubed ham
  • 6 eggs
  • 1/4 cup milk

Instructions

  1. Use a 9 x 13-inch pan and spray with Pam.
  2. Spread hash browns on the bottom of the pan.
  3. Layer crumbled bacon, chopped onions, mushrooms, cubed ham, and cubed cheddar cheese over the hash browns.
  4. In a bowl, beat the eggs with milk, then pour the egg mixture evenly over all the layered ingredients.
  5. Cover the dish with foil and refrigerate overnight.
  6. Bake, covered, for 45 minutes at 350°F.
  7. Uncover and bake for an additional 25 minutes.
  8. Let stand a few minutes before serving.
