Healthy Heroes are vibrant, veggie-packed sandwiches with lean meats and fresh toppings, perfect for a nutritious lunch that appeals to both kids and adults alike.
Ingredients
- 1.5 cups thinly sliced fresh mushrooms ⓘ
- 1 cup seeded and chopped cucumber ⓘ
- 2 tablespoons sliced green onions ⓘ
- 2 cloves garlic minced ⓘ
- 0.25 cup balsamic vinegar ⓘ
- 0.25 teaspoon freshly ground pepper ⓘ
- 2 hoagie buns
- 4 lettuce leaves ⓘ
- 4 ounces thinly sliced lean ham ⓘ
- 4 ounces thinly sliced turkey breast ⓘ
- 8 slices tomato ⓘ
Instructions
- Combine sliced mushrooms, chopped cucumber, green onions, minced garlic, balsamic vinegar, and pepper; let stand for 30 minutes.
- Slice hoagie buns in half horizontally.
- Remove soft insides of both top and bottom halves, leaving 1/2-inch thick shells; reserve crumbs for other uses.
- Line each bottom half with a lettuce leaf.
- Spoon mushroom mixture evenly onto lettuce using a slotted spoon.
- Cover mushrooms with remaining lettuce leaves.
- Arrange ham, turkey, tomato slices, and cheese on top of the lettuce.
- Place the top halves on the sandwiches and wrap in plastic wrap.
- Chill up to 2 hours.
- Cut each sandwich in half to serve.
