Ingredients

  • 1.5 cups thinly sliced fresh mushrooms
  • 1 cup seeded and chopped cucumber
  • 2 tablespoons sliced green onions
  • 2 cloves garlic minced
  • 0.25 cup balsamic vinegar
  • 0.25 teaspoon freshly ground pepper
  • 2 hoagie buns
  • 4 lettuce leaves
  • 4 ounces thinly sliced lean ham
  • 4 ounces thinly sliced turkey breast
  • 8 slices tomato

Instructions

  1. Combine sliced mushrooms, chopped cucumber, green onions, minced garlic, balsamic vinegar, and pepper; let stand for 30 minutes.
  2. Slice hoagie buns in half horizontally.
  3. Remove soft insides of both top and bottom halves, leaving 1/2-inch thick shells; reserve crumbs for other uses.
  4. Line each bottom half with a lettuce leaf.
  5. Spoon mushroom mixture evenly onto lettuce using a slotted spoon.
  6. Cover mushrooms with remaining lettuce leaves.
  7. Arrange ham, turkey, tomato slices, and cheese on top of the lettuce.
  8. Place the top halves on the sandwiches and wrap in plastic wrap.
  9. Chill up to 2 hours.
  10. Cut each sandwich in half to serve.
