Ingredients

  • 3/4 cup flour
  • 10 oz frozen strawberries
  • 1 cup finely chopped pecans
  • 1 teaspoon salt
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 cup vegetable oil

Instructions

  1. Thaw the strawberries.
  2. Preheat oven to 350°F (175°C).
  3. Grease and flour a 9 x 5-inch loaf pan.
  4. In a small bowl, combine the flour, salt, and baking soda, then set aside.
  5. In a large bowl, beat the eggs and vegetable oil until well combined.
  6. Add the thawed strawberries and continue beating until the strawberries are in small pieces.
  7. Add the flour mixture to the wet ingredients and blend well.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for one hour or until a toothpick inserted into the center comes out clean.
