Ingredients

  • 1/4 cup light cream or evaporated milk
  • 1 tablespoon butter
  • 1/2 cup grated process cheese
  • 1 (No. 2) can string beans, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 hard-cooked eggs, diced
  • bread crumbs

Instructions

  1. Drain liquid from the string beans.
  2. Reduce the liquid by boiling until it measures about 1/4 cup.
  3. Cook the eggs in simmering (not boiling) water until done, then peel and slice.
  4. In a buttered casserole dish, add the sliced eggs.
  5. Add the drained beans, butter, cream, salt, and pepper to the reduced liquid and bring to a boil.
  6. Add the grated process cheese to the boiling mixture, stirring until melted.
  7. Pour the cheese mixture over the sliced eggs in the casserole.
  8. Cover with bread crumbs.
  9. Bake in a hot oven until the bread crumbs are browned.
