Ingredients

  • 2 large fish fillets (8 oz each; sole or fluke recommended)

  • 4 1/2 oz Brie cheese
  • 1 (6 oz) can crabmeat

  • 1/2 whole lemon

Instructions

  1. Whisk 2 eggs in a bowl.
  2. Add a pinch of whole fennel seeds and dill seed to the eggs.
  3. Lay both fish fillets in the egg mixture and let them soak for 5 minutes.
  4. Remove the fillets and coat them with breadcrumbs.
  5. Set the breaded fillets aside; also set the egg mixture aside.
  6. Drain the can of crabmeat and set aside.
  7. Melt 1/2 stick of butter with the juice of 1/4 lemon in a frying pan.
  8. Add the crabmeat to the butter and lemon mixture and bring to a sizzle.
  9. Remove from heat and stir in Grey Poupon mustard.
  10. Slice the Brie cheese long and thin.
  11. In a baking dish that fits tightly, layer one breaded fish fillet on the bottom.
  12. Layer crabmeat, then pour the butter and lemon sauté over it, undrained. Add pepper and squeeze 1/4 lemon to taste.
  13. Layer the remaining egg mixture over the crabmeat.
  14. Place the sliced Brie cheese on top of the egg layer.
  15. Add the second breaded fish fillet on top.
  16. Bake at 325°F for 20 minutes, then broil for about 5 minutes until golden brown.
