Stuffed Eggs Supreme features hard-boiled eggs filled with a rich, creamy mushroom and cheese sauce, perfect for elegant appetizers or brunch gatherings with sophisticated flavors.

Ingredients

  • 1/4 lb. mushrooms, chopped
  • 1 tsp. chopped tarragon leaves
  • 8 Tbsp. oleo
  • 3 Tbsp. flour
  • 2 1/2 c. light cream
  • 1 c. grated Swiss cheese
  • 3 Tbsp. grated Parmesan cheese
  • 8 hard-cooked eggs
  • 1 c. soft bread crumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small skillet, cook chopped mushrooms with chopped tarragon leaves in 2 tablespoons of oleo until all liquid evaporates.
  3. Melt 4 tablespoons of oleo in a saucepan.
  4. Blend in flour, salt, and pepper; cook, stirring, for 1 minute.
  5. Add light cream; cook, stirring, until mixture boils and thickens slightly.
  6. Remove from heat.
  7. Add grated Swiss cheese and 2 tablespoons of grated Parmesan cheese; stir until cheese melts.
  8. Cut hard-cooked eggs in half and remove yolks.
  9. Fill egg whites with the mushroom and cheese sauce.
  10. Sprinkle with soft bread crumbs.
  11. Bake in the preheated oven until heated through and golden on top, about 10 minutes.
