Ingredients

  • 1/4 cup fine chopped green pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1 cup bread crumbs (panko)
  • 2 eggs, beaten
  • 1/2 teaspoon pepper
  • 1 tablespoon parsley, chopped
  • 1 (6 1/2 oz.) can crabmeat (lump)
  • 8 flounder fillets

Instructions

  1. Simmer green pepper, onion, celery, and garlic in butter; let cool slightly.
  2. Mix the cooled vegetables with bread crumbs, beaten eggs, pepper, and chopped parsley.
  3. Add lump crabmeat to the mixture and combine well.
  4. Place 2 to 3 tablespoons of stuffing in the center of each flounder fillet.
  5. Put a pat of butter on top of the stuffing and sprinkle with lemon juice.
  6. Lap the ends of each fillet over the stuffing and secure with toothpicks.
  7. Sprinkle the stuffed fillets with paprika.
  8. Place the fillets in a greased baking dish and bake at 325°F for 25 to 30 minutes.
