Stuffed Halibut

A flavorful stuffed halibut dish featuring a savory bread and shrimp filling, baked to perfection. Elegant enough for entertaining and easy enough for a weeknight dinner.

Ingredients

  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. finely chopped celery
  • 2 Tbsp. margarine
  • 2 slices day old shredded bread
  • pepper to taste
  • 8 medium shrimp, cooked, peeled, cleaned and diced
  • 1/4 c. water

Instructions

  1. Preheat oven to 375°F.
  2. Saute chopped onion and celery in 2 tablespoons water until moistened.
  3. Rinse halibut fillets and pat dry.
  4. Lay one fillet, skin down, in a margarine-coated baking dish.
  5. Cover the fillet with the bread stuffing mixture.
  6. Place the second fillet on top of the stuffing and press down firmly.
  7. Secure the edges with toothpicks if needed.
  8. Coat the top of the fish with margarine.
  9. Bake in the preheated oven for 25 minutes.
  10. Serve hot.
