Ingredients

  • 1 lb. mushrooms
  • 1 Tbsp. grated Parmesan
  • 1 Tbsp. chopped parsley
  • 3 Tbsp. butter
  • dash of pepper
  • 1 clove garlic, minced
  • 1/2 c. fine dry bread crumbs
  • 1/2 tsp. salt

Instructions

  1. Preheat oven to 350°F.
  2. Wash mushrooms and select the 12 largest ones.
  3. Remove stems from the mushrooms and set aside.
  4. Chop the mushroom stems and remaining mushroom caps.
  5. Place the chopped mushrooms in a skillet.
  6. Add butter and cook over low heat for 5 minutes.
  7. Add grated Parmesan, chopped parsley, minced garlic, bread crumbs, salt, and pepper to the skillet.
  8. Mix well to combine the stuffing ingredients.
  9. Fill each mushroom cap with the stuffing.
  10. Place stuffed mushrooms in a greased baking pan.
  11. Drizzle with melted butter and sprinkle with additional Parmesan cheese.
  12. Bake at 350°F for 15 minutes until golden and heated through.
