Ingredients

  • 8 medium green peppers
  • 1 lb. lean ground beef
  • 1/4 cup chopped onion
  • 1 1/2 cups croutons
  • 2 oz. shredded Mozzarella cheese
  • 1/4 cup diced mushrooms, drained
  • 2 medium fresh or canned tomatoes, coarsely chopped
  • 1/2 teaspoon Worcestershire sauce
  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Cut off tops of peppers and remove seeds.
  2. Precook peppers in boiling water for 5 minutes.
  3. In a skillet, brown the ground beef with chopped onion.
  4. Drain excess fat from the meat mixture.
  5. Stir in croutons, diced mushrooms, chopped tomatoes, and Worcestershire sauce.
  6. Spoon the mixture into the prepared peppers.
  7. Place the stuffed peppers in a 10 x 6 x 3 3/4-inch baking dish and add 1 cup water to the dish.
  8. Cover and bake at 350°F (175°C) for 25 minutes.
  9. Uncover and sprinkle with grated Parmesan cheese.
  10. Bake for an additional 5 minutes until cheese melts and is golden.
