Stuffed Turkey Breasts
Juicy stuffed turkey breasts marinated in soy sauce and sherry, filled with crispy bread, almonds, and vegetables, ideal for elegant dinners or special occasions.

- Remove fillets from the turkey breast halves.
- Starting at the thinner edge, cut each breast in half lengthwise almost all the way through.
- Open the halved breasts and pound to about 1/4-inch thickness.
- Combine 3 tablespoons soy sauce, sherry, and sugar in a large shallow dish.
- Add the turkey breasts skin side down and marinate for 30 minutes.
- Combine shredded bread, chopped celery, toasted sliced almonds, and chopped green onions.
- Mix melted butter with the remaining 2 tablespoons soy sauce and toss with the bread mixture until moist and crumbly.
- Remove the turkey from marinade and reserve the marinade.
- Spread half of the stuffing mixture on one half of each turkey breast, leaving a narrow border along the edges, and pack the stuffing down slightly.
- Close the turkey breasts and secure with toothpicks. Brush with the reserved marinade.
- Place on a rack in a baking pan and roast at 325°F for 1 hour and 15 minutes, brushing with marinade every 30 minutes.
- Remove from oven and let stand for 15 minutes.
- Remove toothpicks and cut each breast into 1/2-inch thick slices for serving.
