Stuffed Turkey Breasts

Juicy stuffed turkey breasts marinated in soy sauce and sherry, filled with crispy bread, almonds, and vegetables, ideal for elegant dinners or special occasions.

Ingredients

  • 2 turkey breast halves, boned
  • 5 Tbsp soy sauce
  • 2 Tbsp dry sherry
  • 1/2 tsp sugar
  • 8 slices day old bread, shredded
  • 1 c finely chopped celery
  • 2/3 c sliced almonds, toasted
  • 1/4 c chopped green onions and tops
  • 3 Tbsp butter, melted

Instructions

  1. Remove fillets from the turkey breast halves.
  2. Starting at the thinner edge, cut each breast in half lengthwise almost all the way through.
  3. Open the halved breasts and pound to about 1/4-inch thickness.
  4. Combine 3 tablespoons soy sauce, sherry, and sugar in a large shallow dish.
  5. Add the turkey breasts skin side down and marinate for 30 minutes.
  6. Combine shredded bread, chopped celery, toasted sliced almonds, and chopped green onions.
  7. Mix melted butter with the remaining 2 tablespoons soy sauce and toss with the bread mixture until moist and crumbly.
  8. Remove the turkey from marinade and reserve the marinade.
  9. Spread half of the stuffing mixture on one half of each turkey breast, leaving a narrow border along the edges, and pack the stuffing down slightly.
  10. Close the turkey breasts and secure with toothpicks. Brush with the reserved marinade.
  11. Place on a rack in a baking pan and roast at 325°F for 1 hour and 15 minutes, brushing with marinade every 30 minutes.
  12. Remove from oven and let stand for 15 minutes.
  13. Remove toothpicks and cut each breast into 1/2-inch thick slices for serving.
