Ingredients

  • 1/2 cup reduced-calorie margarine
  • 2 eggs
  • 19 packets sugar substitute
  • 1/4 teaspoon maple flavoring
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1 cup flaked coconut
  • 5 maraschino cherries

Instructions

  1. Place margarine in a 2-quart glass bowl.
  2. Microwave on High for 1 minute or until melted.
  3. Beat in eggs until light and fluffy.
  4. Add sugar substitute packets, maple flavoring, flour, baking powder, and vanilla extract.
  5. Blend thoroughly.
  6. Stir in chopped walnuts, raisins, and flaked coconut.
  7. Pour batter into an 8-inch square baking dish.
  8. Microwave on High for 6 to 8 minutes or until done when tested, rotating midway.
