- In a saucepan, combine chopped dates, raisins, prunes, and water.
- Bring to a boil and boil for 5 minutes.
- Stir in margarine and salt; set aside to cool.
- Add beaten eggs and vanilla to the cooled fruit mixture and stir well.
- In a separate bowl, mix flour and baking soda.
- Add the dry ingredients to the fruit mixture and stir until just moistened.
- Fold in chopped nuts.
- Spoon the batter into greased mini muffin pans.
- Bake at 350°F (175°C) for 15 minutes or until a toothpick inserted in the center comes out clean.
