Ingredients

  • 1 cup chopped dates
  • 1/2 cup raisins
  • 1/2 cup chopped prunes
  • 1 cup water
  • 1/2 cup margarine, cut up
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup chopped nuts

Instructions

  1. In a saucepan, combine chopped dates, raisins, prunes, and water.
  2. Bring to a boil and boil for 5 minutes.
  3. Stir in margarine and salt; set aside to cool.
  4. Add beaten eggs and vanilla to the cooled fruit mixture and stir well.
  5. In a separate bowl, mix flour and baking soda.
  6. Add the dry ingredients to the fruit mixture and stir until just moistened.
  7. Fold in chopped nuts.
  8. Spoon the batter into greased mini muffin pans.
  9. Bake at 350°F (175°C) for 15 minutes or until a toothpick inserted in the center comes out clean.
