Ingredients

  • 2 c. sugar
  • 2 sticks margarine
  • 6 eggs
  • 3 c. flour
  • 1 Tbsp. baking powder
  • 2 Tbsp. lemon extract
  • 1 pkg. golden raisins
  • 2 c. chopped nuts

Instructions

  1. Cream sugar and margarine together until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition, then incorporate lemon extract.
  3. Mix in flour and baking powder until just combined.
  4. Add chopped nuts and golden raisins, mixing thoroughly.
  5. Pour batter into a greased and floured tube pan.
  6. Bake at 275°F (135°C) for 1 hour and 45 minutes, or until a toothpick inserted into the center comes out clean.
