A light and fluffy summer squash souffle with cheesy, oniony flavors, perfect as a side dish or light main for warm-weather meals.

Ingredients

  • 2 cups summer squash, cooked, mashed and drained
  • 2 eggs, well beaten
  • 1/2 cup evaporated milk
  • 1/2 stick margarine, melted
  • 1 tablespoon sugar
  • 3/4 cup grated cheese
  • 1 tablespoon cornstarch
  • 1/2 cup grated onion
  • salt and pepper to taste
  • bread crumbs

Instructions

  1. Mix all ingredients except bread crumbs together and pour into a greased casserole dish.
  2. Sprinkle bread crumbs on top of the mixture.
  3. Bake in a 350°F oven for 45 minutes or until the center is set.
