Ingredients

  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 Tbsp dried oregano
  • 1/2 tsp dried red pepper flakes
  • 1 1/2 cups fresh or frozen whole kernel corn
  • 2 Tbsp lemon juice
  • warm tortillas or tortilla chips (optional)

Instructions

  1. Rinse dried beans in cold water, sorting through and discarding any broken beans or debris.
  2. In a large bowl, soak beans in about 2 quarts of water for 4 hours; drain.
  3. In a Dutch oven, combine beans, bay leaf, and fresh cold water to cover.
  4. Bring to a boil; reduce heat and partially cover.
  5. Simmer until beans are soft and tender, about 1 1/2 hours, adding salt halfway through if desired.
  6. In the Dutch oven, heat vegetable oil over medium heat.
  7. Add diced onions, minced garlic, diced green bell pepper, and diced zucchini.
  8. Saute over medium-low heat for about 10 minutes.
  9. Stir in diced tomatoes, tomato paste, a canful of water, chili powder, ground cumin, dried oregano, and red pepper flakes.
  10. Cook, stirring occasionally, for about 20 minutes.
  11. Add 2 cups of drained, cooked black beans to the Dutch oven.
  12. Stir in corn and lemon juice.
  13. Cook for an additional 15 minutes, then taste and adjust seasoning if needed.
  14. Serve hot with warm tortillas or tortilla chips if desired.
