Ingredients

  • 1 cup onion, finely chopped
  • 6 oz. egg substitute
  • 2 eggs
  • 1/2 cup grated cheddar cheese
  • 3 Tbsp. canned chopped tomatoes and green chilies
  • 2 Tbsp. milk
  • 1/8 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • Dash of hot sauce, to taste

Instructions

  1. Fry the finely chopped onions until translucent.
  2. In a bowl, mix the cooked onions with all other ingredients: egg substitute, eggs, cheddar cheese, chopped tomatoes and green chilies, milk, black pepper, salt, onion powder, garlic powder, and hot sauce.
  3. Beat the mixture lightly until thoroughly combined.
  4. Heat a frying pan coated with cooking spray over medium-high heat.
  5. Pour the egg mixture into the pan and cook, stirring often, until the eggs reach your desired level of dryness.
  6. Serve the scrambled eggs with buttered toast. Bacon is optional.
