Ingredients

  • 1 1/2 cups Quaker Quick oats
  • 1 cup flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 1 cup orange juice
  • 1/4 cup canola or other vegetable oil
  • 1/4 cup Egg Beaters or 2 egg whites
  • 1 teaspoon vanilla
  • 1 (6 oz.) package diced, dried mixed fruit

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a 13 x 9-inch baking pan with nonstick cooking spray.
  3. Combine oats, flour, brown sugar, baking soda, cinnamon, and salt in a bowl.
  4. Add orange juice, vegetable oil, egg whites, and vanilla; mix well.
  5. Stir in the dried mixed fruit.
  6. Spread the mixture evenly into the prepared pan.
  7. Sprinkle with 2 tablespoons of oats on top.
  8. Bake for 20 to 22 minutes or until lightly browned and edges pull away from sides of the pan.
  9. Cool completely before cutting into bars.
