Super Breakfast Or Brunch Dish

Ingredients
- 1/2 lb. fresh mushrooms ⓘ
- 2 Tbsp. butter ⓘ
- 12 hard-boiled eggs, cut in quarters lengthwise ⓘ
- 1 pkg. cooked frozen peas ⓘ
- 1 (6 oz.) can water chestnuts, sliced ⓘ
- 1 can cream of chicken soup
- 1 c. sour cream ⓘ
- 1/2 c. milk ⓘ
- 1 tsp. instant minced onion ⓘ
- 1/4 c. sherry ⓘ
- 3 Tbsp. chopped pimiento (optional)
- soft bread crumbs ⓘ
Instructions
- Saute mushrooms in 2 tablespoons butter.
- Arrange in a baking dish the hard-boiled eggs, cooked peas, and sliced water chestnuts.
- Mix and beat gently the cream of chicken soup, sour cream, milk, instant minced onion, and sherry.
- Add chopped pimientos to the mixture.
- Season to taste and pour the mixture over the ingredients in the baking dish.
- Mix bread crumbs with melted butter and sprinkle on top.
- Bake at 375°F for 20 minutes.
