Ingredients

  • 1/2 lb. fresh mushrooms
  • 2 Tbsp. butter
  • 12 hard-boiled eggs, cut in quarters lengthwise
  • 1 pkg. cooked frozen peas
  • 1 (6 oz.) can water chestnuts, sliced
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1/2 c. milk
  • 1 tsp. instant minced onion
  • 1/4 c. sherry
  • 3 Tbsp. chopped pimiento (optional)
  • soft bread crumbs

Instructions

  1. Saute mushrooms in 2 tablespoons butter.
  2. Arrange in a baking dish the hard-boiled eggs, cooked peas, and sliced water chestnuts.
  3. Mix and beat gently the cream of chicken soup, sour cream, milk, instant minced onion, and sherry.
  4. Add chopped pimientos to the mixture.
  5. Season to taste and pour the mixture over the ingredients in the baking dish.
  6. Mix bread crumbs with melted butter and sprinkle on top.
  7. Bake at 375°F for 20 minutes.
