- In a large mixing bowl, combine yeast and warm water.
- Let stand for a few minutes to activate the yeast.
- Add the scalded milk, egg, honey, salt, and thyme to the yeast mixture.
- Add about 1 cup of flour and beat until the batter is smooth.
- Gradually add the rest of the flour until a rather stiff dough forms.
- Turn the dough out onto a lightly floured surface.
- Knead until smooth and elastic, about 8-10 minutes.
- Place the dough in a greased bowl, cover, and let rise for 1 hour.
- Punch down the risen dough and knead a few times on a floured surface.
- Divide the dough in half, then cut each half into 8 even pieces.
- Shape each piece into a small ball.
- Place 8 rolls in a greased loaf pan.
- Drizzle with melted butter.
- Repeat with the other pan.
- Cover and let rise for 30 to 40 minutes.
- Bake at 400°F (200°C) for about 40 minutes or until golden brown.
