Ingredients

  • 1 pkg. active dry yeast
  • 1/4 cup warm water (105~ to 115~F)
  • 1 cup milk, scalded (105~ to 115~F)
  • 1 egg
  • 2 Tbsp. honey
  • dash of salt
  • 1 tsp. dried thyme leaves
  • 3 1/3 to 4 cups flour
  • melted butter

Instructions

  1. In a large mixing bowl, combine yeast and warm water.
  2. Let stand for a few minutes to activate the yeast.
  3. Add the scalded milk, egg, honey, salt, and thyme to the yeast mixture.
  4. Add about 1 cup of flour and beat until the batter is smooth.
  5. Gradually add the rest of the flour until a rather stiff dough forms.
  6. Turn the dough out onto a lightly floured surface.
  7. Knead until smooth and elastic, about 8-10 minutes.
  8. Place the dough in a greased bowl, cover, and let rise for 1 hour.
  9. Punch down the risen dough and knead a few times on a floured surface.
  10. Divide the dough in half, then cut each half into 8 even pieces.
  11. Shape each piece into a small ball.
  12. Place 8 rolls in a greased loaf pan.
  13. Drizzle with melted butter.
  14. Repeat with the other pan.
  15. Cover and let rise for 30 to 40 minutes.
  16. Bake at 400°F (200°C) for about 40 minutes or until golden brown.
