Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 eggs
  • 16 oz. can cream-style corn
  • 1/2 cup shredded Cheddar cheese and Monterey Jack cheese
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 1/4 teaspoon salt
  • 4 teaspoons baking powder
  • 14 oz. can chopped green chilies

Instructions

  1. Preheat oven to 350°F.
  2. Cream butter and sugar in a mixer bowl until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Add cream-style corn and shredded cheese; mix well.
  5. Combine cornmeal, flour, salt, and baking powder in a bowl.
  6. Add dry ingredients and chopped green chilies to the wet mixture.
  7. Mix well until combined.
  8. Lightly grease a 9 x 13-inch pan and pour in the batter.
  9. Bake for 30 minutes, until a light brown color.
