Ingredients

  • 4 cups flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 2 1/2 cups cranberries
  • grated rind of 1 orange
  • 2 eggs
  • 4 tablespoons melted butter
  • 1 cup chopped nuts
  • 1 cup orange juice
  • 4 tablespoons hot water

Instructions

  1. Mix dry ingredients in a bowl and add grated orange rind.
  2. Combine orange juice, melted butter, and hot water.
  3. Add the wet mixture and beaten eggs to the dry ingredients and mix well.
  4. Fold in chopped nuts and cranberries.
  5. Pour batter into two greased bread pans.
  6. Bake at 350°F (175°C) for about 1 hour and 10 minutes.
  7. Wrap the bread in wax paper while hot and refrigerate for 24 hours before serving.
  8. Can be frozen for later use.
