Ingredients

  • 1/4 c. sesame seeds
  • 1/2 c. raw cashews
  • 3/4 c. lentil sprouts
  • 1 medium carrot
  • 1/2 small green bell pepper
  • 1 (4 inch) celery stalk
  • 2 Tbsp. olive oil
  • 1 leaf Chinese cabbage
  • 2 tsp. tamari or soy sauce
  • 8 sheets toasted nori
  • 1 large tomato
  • alfalfa and sunflower seed sprouts

Instructions

  1. Place the sesame seeds, cashews, and lentil sprouts in a food processor and process until thick and meaty.
  2. Add the carrot, green bell pepper, and celery and process until smooth.
  3. Add the olive oil, Chinese cabbage, and tamari and process until the cabbage is chopped but not liquefied, maintaining some texture.
  4. Spread approximately 1/2 cup of the filling on the lower half of a sheet of toasted nori.
  5. Add a line of sliced tomatoes and sprouts on top of the filling.
  6. Roll the nori sheet tightly to enclose the filling and toppings.
  7. Serve immediately for crunch or wrap in plastic wrap and store for later use, noting that the nori becomes less crunchy over time.

Tips & Substitutions

For a variation, consider substituting the raw cashews with sunflower seeds for a nut-free option. You can also add other vegetables like cucumber or avocado for extra crunch. If you prefer a spicier kick, include a dash of sriracha in the filling. Ensure the sesame seeds are toasted for a richer flavor.

Serving Suggestions

These sushi rolls can be served as a light lunch or appetizer and pair well with a side of Churn Cucumber Pickles for a refreshing contrast. For a complete meal, consider serving alongside a bowl of Fresh Navy Bean Stew, which complements the flavors beautifully.

Storage & Reheating

To store leftovers, wrap the sushi rolls tightly in plastic wrap and place them in an airtight container in the refrigerator. Consume within a day for the best texture. Avoid reheating, as the nori will lose its crispness; instead, enjoy cold or at room temperature.

Can I use other types of sprouts?

Absolutely! You can substitute lentil sprouts with mung bean sprouts or even radish sprouts for different flavors and textures. Just ensure they are fresh for the best taste.

Is there a gluten-free option for the sauce?

Yes! Tamari is often gluten-free, but always check the label. Alternatively, you can use coconut aminos as a soy sauce substitute, which is both gluten-free and adds a slightly sweeter flavor.
